I bring my lunch every day. I mix a big green salad with mixed lettuces and spinach at home...
Every moring I put some of it in an individual bowl sprinkle it with grated (i.e. carrots, beets, diakon) or cubed (ie.e zucinni, yellow squash, broccoli, culifower) veggies, (different all the time) on top, most of which I prepare in advance. I also bring about a cup of cooked grain (brown rice, millet, couscous...whatever), in a seperate container. I keep a bottle of my favorite dressing at work...(usually ginger miso) and at lunch time, I heat the grain and put it in the salad hot and then add some feta cheese, or maybe a little temph or whatever...some cherry tomatoes...maybe avacado...and then mix it all up and yum!
In the winter sometimes I cook some buckwheat and mix in some stir fried onions and parsnips. At lunch time I heat some of that up and put it on a bed of greens...maybe with some cooked yams and cranberries...maybe some plain yoghurt on top...very festive.
I am very into a a complete "meal in a bowl".
