Hi Mike, I've experienced a lot of what you are going through.

I found a web site that helped me a lot. I had known how to avoid Mono-Sodium-Glutamat (Natrium Glutamat) in all its hidden names in foods for many years. But, when I became sensitive to free glutamates, it was a different story, I had no clue. I found this web site that helped me out quite a bit. Maybe you can add to your ability to identify it too.

On a side note, if your chicken was natural, and/or organic, usually slow cooking protein in a crock pot is safe, I thought. Isn't that considered "bound" glutamates, if it is in animal protein?
