I adore raw cacao!!! IMO it is perfectly safe and healthy and much better for you raw than cooked (think enzymes). I don't agree with Paul Nison's views, however, I do agree with everything in moderation. Check out David Wolfe on cacao.
When it comes to processed chocolate, I find the dairy and sugar addictive. I never feel addicted to raw cacao.
The best raw cacao is the criolla variety - it tastes much, much nicer.
You can make some amazing raw cacao chocolates - equal mix of raw cacao, raw honey and coconut oil or cacao butter. Add a bit of salt. Gently melt and then stir together and place in silicon moulds - place in the freezer for 1 hour and yum!!
