a bit from the past...
A casual search for lime water and milk... produced these snippets:

A few infant formulas... 1913
As this 1913 manual described, instructs, blending top milk with sugar, lime-water, and water. For the first 6 months of life, he says, this should do any infant well when needed.
1908 -
home formula recipe from 1908 contained instructions to obtain the milk both morning and evening and then let it stand for several hours to obtain the top cream (Rossiter 90). This recipe included freshly scalded cream, cows' milk, lime water, brown sugar, and boiled water.

When super-acidity is indicated, a sub-acid fruit such as orange of pineapple, eaten half an hour previous to the milk, will in part counteract the extreme acidity. For children, the usual procedure is to give lime water directly or add it to the milk. The theory is the same.
The test referred to above is readily made by the use of litmus paper, first using the blue for saliva and urine. If the paper turns a decided red, acidity is present. In the case of a child, we proceed to reduce whole milk to almost the strength indicated by age and general condition, adding one or more tablespoons of lime water without the milk and an hour afterwards feed milk and lime water. Should the stomach still reject the milk, prepare barley water and to this add lime water and feed as usual. Then one-half hour before the next feeding give the lime water and when it is time for feeding, give the milk and lime water, This method, plus a little patience and common sense, will overcome the worst case.
When children of one or more years of age cannot take milk, the procedure is more simple, fruit juices being used in the same manner as for adults.
When there is no acid-reaction, the test should be made for sub-acidity. If this is indicated, a few drops of grapefruit, lemon or lime juice may be given in water half an hour before feeding time, then followed by the milk. Baked sour apples, tart berry juice, or the juice of other tart fruit may be used.

I found it interesting because it included the 1908 baby formula recipe with lime water noted above.

Foods are preserved by exclusion of air in other ways than canning. Examples: grapes in bran, eggs in lime water, etc.
also...
To prevent acidity of the stomach, add from one to two teaspoonfuls of lime water to each half-pint of milk. Lime water may be bought at any druggist's, or easily prepared at home.
Then it proceeds to give the recipe for making... it does say to boil the water and pour over the slaked lime though.
also had the infant formula above listed... again.
From The Genuine Milk Cure published in 1922...
After every glass of milk take a few drops of lemon juice or a little grapefruit. Milk must curdle before digestion takes place. The lemon juice assists this.
Drink the milk slowly, sip it. Some people take it through a straw.
Here's where your courage is needed. The first few days the milk may nauseate you. If so take a little lime water or (preferably) increase the quantity of lemon juice. This will pass away when your system gets clear of its poisons. Stick to your six quarts.
This one is curious due to the lemon juice reference, however not if one remembers this post

there is a great deal more... including all of the Cayce readings where lime water is suggested for various conditions... and that the lime water was used similarly and to same effect as milk of magnesia as it was more readily available in an agrarian culture... however, I am out of time for tonight.
So much knowledge lost... find an elder... preferably one who was born and raised on a small family farm and start learning from them before their knowledge is lost.
NOTE: most medical references as DIET; A KEY TO HEALTH © 1983 referenced, also referred to ingesting food acids, usually citrus, to deal with an overly alkaline condition.
