If you are concerned about starting slow (a good concern), I would drop the amount of vinegar you are using until when mixed with the 2-3 Tablespoons of pickling lime water, you get a very neutral taste.
You can start out with just 2-3 tablespoons of pickling lime water in a glass and slowly add the vinegar until the chaulky taste of the pickling lime water is totally eliminated.
Then add the molasses according in an amount that suits your taste.
Since we are used to things that taste sour, it is much easier to push your acid levels by having a drink that has too much weak acid in the form of ACV or lemon.
We are not used to tolerating any excess "chaulky" taste so by starting with the desired amount of pickling lime, you are making it easier to create a balanced drink.
