Is KNO3 (ie Potassium Nitrate) ever a good idea for your garden?

We spend a lot of time focusing on the negative effects of farming dependent on excessive amounts of Potassium Nitrate and rightfully so as it is devastating on the health of our bodies and the health of the environment.

My question is, do people who practice high BRIX gardening techniques ever user Potassium Nitrate is small amounts to produce high BRIX produce?
