This is the most terrible key to his statement. The last sentence.
"The fungal expansion in fact becomes greater as the host tissue becomes less nutritious to the candida, and thus less reactive against it."
It sounds like no diet can control the monster. The best we can do is control the yeast, natural to our body, before it transforms to fungi.
Failing that, it would seem to be best to use whatever anti-fungals we can find. And rotate them.
