Thanks for sharing, yeah, summac a staple here. We use it regularly on everything. I am sure you can get it there somewhere. We put it on hummus and eggs and potatoes with summac. We put it in our zatar dip also. I love summac and no house in Jordan would be without it.
I hate anything fried but I would think this would be good if we could steam the eggplant and them place them in the oven to dry out some.
I do make a eggplant parmesean that is steamed and then breaded and placed in the oven opposed to frying.
