This is an easy problem. If you go on a vegan diet and do lots of JOGGING, the extra weight should come off. Only add extra protein IFF you become skinnier than you desire.
Long and slender muscles naturally have more flexibility, and can generate a larger amount of force in a shorter amount of time (plyometrics). The mistake of bodybuilding is that it adds excess protein to build "unnecessary" muscle. This extra muscle is good only for raw lifting power, but it limits mobility.
Also consider learning parkour, since it is not nearly as boring as jogging, and has the same benefits (actually, better). And don't do machines. If you want to lift, do bodyweight exercises only. This way, you won't put on a bunch of muscle that you don't really need.
