Fuhrman "Diet" - I've started it!


...ish. I'd only read part of the Menu chapters yesterday but I had decided to break my short fast and start. After reading in the evening, I realized that I'd possibly eaten too much avacado and not enough veggies for lunch but I basically followed the plan. In the evening I got all psyched up and bought a bunch of veggies and tried cooking my first meal based on a recipe. I didn't like the sauce for the veggies and so I changed it to resemble other recipes I knew and it was disasterous. My first attempt at cooking all the veggies was laughable. No, no, I'm not being modest. I believe I really could've enduced gaffaws had there been an audience! But it was edible and some veggies were pretty good (the ones that don't soak in too much sauce, lol). Actually the Zuccini was pretty good - should've used more of that. My bean of choice is Edamame, steamed with crushed garlic.

Another possible deviation that I suppose I won't do in the future is salt. Dr. Fuhrman says no to salt but he hasn't distinguised table salt and unprocessed Sea Salt . But then I think perhaps removing salt might have to do with letting the taste buds appreciate the taste of natural foods? I'd ask but his member forum costs money. So anyway, I also salted the Edamame.

I ate a bunch - he tells you to try to eat 2 lbs veggies - one raw and one cooked. I doubt that I ate enough. I found myself to be very full and not wanting to eat more. I slightly overate at each meal until I truly wanted to NOT eat but it doesn't seem like I ate a huge amount. Plus I'm not craving. The fast usually helps with that but after a while cravings come back. Maybe with proper nutrients I won't have that problem. Maybe also I underestimated the progress I'd made previously with fasts and diet alterations.

Bottom line: I followed the plan closely (not precisely) yesterday and felt good, full and like the whole amount was too much to eat. I did nibble some almonds between breakfast & lunch b/c after a while fruit breakfast digests and you get hungry. Now I will just eat some almonds with my morning fruit. I brought a bunch of veggies today and I'm feeling pretty good about the plan.

Amusingly, I don't know how I got out of some habits, but I used to love to snack on carrots but as a grown up addicted to carbs, crackers or something else always looked just a bit more appealing. Eating carrots again after my veggie lunch yesterday was quite pleasureable and even nostalgic. I would like to experiment with ways to make cabbage, something I always loved as a kid. My biggest beef with super healthy salads is the dressing super healthy people use. Vinegar on veggies? YUCK. The homemade dressings always seem too strong on the vinegar. I love salads with a tasty dressing. I'm thinking I may follow the plan with the one concession that I get to use the dressings that I like from the health food store, and hope they are not too awful.

Other than that, feeling good and excited. I am excited about tasting all these yummy veggies that I actually do like. I'm excited about the change of menu and learning to cook more stuff. I'm excited about not feeling cravings and the possibility of getting to my ideal weight (which might be a little more than my body's natural weight... if it is I get to eat more nuts!). I hope more folks decide to join; either way I'll keep ya posted. :-)
