Dry the oregano and push thru a mesh colander and get it to a fine state, add salt, sumac, sesame and mix well. Add some olive oil to it to slight the flavor but not enough to moisten. Store in a tightly sealed jar.

Then put in a bowl and have a separate bowl for the olive oil. Dip the bread slightly in the oil and then dip in the oregano mixture. This is a staple here in Jordan and very delicious.

I too like doing everything homemade. My philosophy nothing in a package or jar.
