No, many times a tooth can be crowned without needing a root canal.

While it might sound self-serving, I would not pull it out yourself. The chance of infection (not to mention pain) is too great.

"Hollistic" dentist might be talking about cavitation, which is an unfounded way for them to charge a lot more money for the same amount of work. I have seen no evidence to support their claims.
A traditional dentist:
Depends on what the scenario is. Usually its multiple curved roots that are easier to remove separately instead of taking out the entire tooth at once. If this is the case, it will be easier, faster, and less traumatic to remove some bone between the roots (minor amounts).
Any other need to remove bone does not seem to apply in the scenario you have given.
Most importantly, I would ask what exactly they need to do so you understand what is going on and why. If they are unable or unwilling to give you the information you need, I would find another dentist.
