I remember when i was a kid my parents loved to make an aspic of pigs feet.
Recipe sounds similar to yours. Boil the feet with bay leaves , cracked peppercorns, and other spices. When it cooled it was cut up into small pieces, then poured into a glass pan and refrigerated.
After it had set we would cut it into pieces, and upon serving, pour some white vinegar on it and eat it with good rye bread. I used to love that stuff. But i got out of the habit of eating this and don't think i could anymore. Often wondered if it had any health benefits.
