Glad to find that you have an interest in this! I also think (know, actually) that ph is important. I read very little about about ALKALINITY, but there is a website that sells Saliva test strips ... www.simplyhydroponics.com/hydrion_strips.htm ...and .... www.southernscientific.com/test_papers_meters.asp Dr. David Williams has a newsletter at drdavid williams.com The May 2002 issue also lists 25 alkalinizing and 25 acid forming foods and also recommends the addition of POTASSIUM bicarbonate (baking soda) to help neutralize acid. He cites different studies, some using SODIUM BICARBONATE (also baking soda) that would also remineralize bones. I don't understand what would bethe difference in these different types of baking soda, but the recommended dosages remain in the 5 to 20 gram a day per day range. It would probably be better to get it from a drugstore instead of the grocery store (because of the preservatives and caking ingredients). I can't type out the whole list of alkalinizing foods (it's late at night and would take too long, I'm a two finger hunt and peck typist), but some are;

peas
potatoes
milk
cream
goats milk
eggs
whey
plain yogurt
fruit juices
all vegetable juices
garlic
cayenne pepper
gelatin
miso
vanilla extract
brewers yeast
most vegetable and unprocessed Sea Salt (veggy Sea Salt ?)



ACID forming foods include:

practically all drugs (WOW)
white vinegar (apple cider vinegar and sweet brown rice vinegar are less acid producing)
mayo
ketchup
mustard
soy sauce
table salt
popcorn
pastas
all meat and fish
rice
coffee
cola
alcohol
bread
crackers
pastries
sunflower and pumpkin seeds
wheat germ


a lot of these listings have PARENTHESES and there are exceptions that are not clear, so further investigation is necessary to get it right.
