Maple Syrup


Would the following be a general outline when seeking quality maple syrup?

Collection: bucket
Cooking: wood fire/boiled
Filtration: cheese cloth or comparable system
Absolutley no additives of any kind

I've found some that are much darker than others. Is all maple syrup suppose to be dark and not "amber"? I guess the majority of producers are watering down their product. Thank you
