"There is no appreciable muscle loss during a fast. Muscles do atrophy
during the extended rest associated with fasting, but that disuse
atrophy is quickly regenerated, usually within a matter of days."

I've read in quite a few places that you will only lose muscle due to inactivity. Therefore if you keep your muscles active, you should minimize any loss. If you keep consuming juice, you should have no problems with exercise.
"I wonder how your body deals with lack of Protein and Carbs during a long juice fast like this. How does it feed and maintain themselves without both?"
Fruits and veggies do contain protein and carbs. And if you're body doesn't get enough from the juice you're consuming it will then turn inwards and start to feed off diseased / damaged cells and your fat reserves first.(catabolism)
Hope this helps!
