Those are good choices. Let me add one.

Cucumber chips.

Cut cross ways on a mandolin 1/8 inch thick. No thinner as they shrink when dehydrated.

Sprinkle with your favorite herbs.

I like:

Sea Salt

Black pepper

Paprika, or Red pepper flakes. Or whatever you like.

Just a little of each, then lay on dehydrator tray and dehydrate until crisp. Good replacement for potato, or Corn chips that are fried in oils.

Can be done in the oven, but to high of heat keeps them from being a Raw food.

Also in the sun if you have some way to keep the varmits away from them.
