Zero problems while using citric acid ..Like I said the pH of lemon and lime do vary

citric acid is very handy
Tip- got a response from

get the citric acid from them- very cheap..

Click on COOKING and their price for citric acid is 1 lb s $5.57 or 5 pounds $12.85

Also it is in an anhydrous format meaning zero water with it(citric acid with water is called hydrated citric acid-this is not the kind to buy;if you do ,you have to heat it up in a pan-over 15 mins or until all the water has evaporated..)
