You do not want to allow the dry NaClO2 to come into contact with organic matter, or to sit in direct sunlight. So, even if the solution were to evaporate and leave just the dry sodium chlorite, as long as it was properly contained and in a closet as you say, it would probably be fine.

It is really very safe in solution, but you do have to pay attention to any spills, and be careful to wash off thoroughly when you get it on your skin.
