More likely the cause for the difference in digestive time are the enyzmes.

Cooking/heating destroys the enzymes within the food thereby making the body work much much harder to digest. Please see the Enzymes page at The Doctor Within (http://www.thedoctorwithin.com/articles/enzymes_longevity.html) for further information.
