Re: What do diabetics should eat? Help!

Firstly, you have to decide what type of diet is good for you. I have to avoid most carbs, and even do low carb vegetables - that and protein is my diet. For some, a plant based diet has been successful, with fruits and vegetables being the majority of the foot - raw and cooked - supplemented with legumes, nuts, and some grains. I could not last on this diet because both fruit and grains raise my blood sugar. Others do well on a portion type diet like you have at your dinner, meat, potatoes and vegetable. I can't do that because I don't combine protein with starches, even when I ostensibly had starches. So you have to find out what works for you, and you can do that taking your blood Sugar two hours after a meal. It should be 140 or lower.

If I ate two pieces of toast and a banana in the morning, my Sugar would stay high. Both carbs and caffeine raise blood Sugar and then lower it even lower than it was before eating. So I would think that would keep me hungry all day. So I do not do coffee.

I do eat cheese, and I eat it alone or with some low calorie vegetables. The cheese I mostly eat is fresh cheese (a Latin product) which is like our farmer's cheese. Maybe I will have some beets, or cucumbers, or pickles and olives, with it, or I will put it in a salad. I make a vegetable soup once or twice a week, starting with tomatoes and celery, and add anything else I want - I really like beets and/or cabbage. At least three times a week I will open a can of salmon and mix it up with some mayonnaise and Celery and some raw almonds if I have them. I eat this over 2-3 meals, by itself. Sometimes I will cook up some green beans with onions and garlic and pour oil over each portion. I cook up pinto beans once or twice a month. I use a lot of celery, cilantro and parsley. I drink protein shakes (alone). I use stevia instead of sugar and avoid all the sugar substitutes. I try not to eat a lot of different things at the same time. So in the morning I might have some scrambled eggs, or some vegetable soup, or cheese, or whatever is left over. This morning I had some steak (by itself) that I had cooked for last night's dinner. If I had oatmeal or toast in the morning, I would be hungry all day. One day I went off the wagon and ate a small fried rice and three bananas in one day and the next morning the scale said I had gained six pounds - six pounds!!!

I don't eat anything from a box, and only tomatoes and salmon from a can. I don't by bread or sweets or ice cream or anything starchy. I try to keep my diet as natural as possible, since I ate so badly for so long, and that is what got me into this disease. You can do the same on any diet that works for you, one like mine, or strictly plant based or portion controlled. You will only know what really works for you by fingersticks after meals (2 hours), the scale and your energy levels. If you feel there is a food you simply cannot do without, it probably is bad for you. We make ourselves intolerant to foods by eating them every day.
