slimy fermented carrot ginger


Hello,
I was wondering if anyone else has had there fermented carrot ginger turn slimy?

My batches seem to be turning slimy 3 out of 5 times. Not the best odds. The batch doesn't end up tasting or smelling bad, it just gets slimy. UGH!!..

Is it bad to eat slimy fermented veggies?
What causes the slime?

This last time I used some extra precautions:
1. I boiled and then cooled water that I added to the concoction, so that it wasn't my tap water adding bad bacteria
2. I used a oxygen bleach to clean the veggies.
3. I added grated horseradish to the mix as an added aseptic.

But still after 3 days fermenting, and 3 days in the fridge I can start to see a little bit of slimyness forming in the batch!!!

Any ideas?
