Here is some more detail on a couple of things that Celcius mentioned. These concepts are very important to overall health and are taught in very few places other than this forum.
1. BRIX
BRIX is a measurement of the amount of complexed carbohydrates in a fruit or a vegetable. Complexed carbohydrates are sugars bound to alkaline minerals and amino acids. The higher the BRIX, the better quality the food. BRIX is measured by squeezing some of the juice of a fruit or vegetable onto a refractometer.
Some interesting characteristics about high BRIX fruits and vegetables:
1. They do not attract insects.
2. They do not spoil. Overtime they just lose their water content and dry up.

2. NPN
NPN stands for non-protein nitrogen. This is a highly acidic substance found in improperly grown fruits and vegetables. When produce is improperly fertilized, picked too early, or grown in poor soil, it typically contains this substance which makes these foods acid-forming. If some produce like cucumbers or lettuce tastes uncharacteristically bitter, it probably contains NPN.
Understanding these two concepts and purchasing a refractometer will help empower you to choose better quality foods and also realize why things like akalyzing drinks and baths are necessary given the quality of our food supply.
