Quoting from 'Erica White's Beat Candida Cookbook':
'Most shop-bought baking powder not only contains sodium bicarbonate, a form of salt, but also wheatflour, which is simply another name for refined white flour. A preferable alternative to sodium bicarbonate, in order to avoid the salt content, is potassium bicarbonate, which you might be able to buy from your local pharmacist or health-food store. As it is not always easily available, you might need to make a compromise and use sodium bicarbonate. However, by putting together your own raising agents - even if you have to use sodium bicarbonate instead of potassium bicarbonate - you are at least avoiding the refined flour content of commercial baking powders, and you will probably be avoiding something else which is rather more significant.
An essential part of baking powders is an acid ingredient to activate the bicarbonate.'
She goes on a bit and then explains that yoghurt and lemon juice are effective acid activators. She uses plain yoghurt instead of lemons in some of her bread recipes; either will do.
