Two zucchini
Two carrots
½ acocado (peeled, cored and sliced)
2 Tbs red onion (finely diced)
½ tsp dill
½ c. sour cream (no fat)
Dash black pepper
One Tbs. vinegar (red wine)
2 lettuce leaves (Romaine or your favorite)
Chill ingredients.
Grate zucchini & carrots. Slice avocado. Mix, dill, pepper, vinegar, zucchini, red onion, carrots and sour cream. Add to vegetable mixture. Place ¼ c. of mixture in the side of the lettuce leaf.
