Fermentation equals mold. It is crucial that mold fungi and bacteria be kept in qualitative/quantitative balance. In areas of the world where they have high levels of bacteria fermented products act like antibiotics(concentrated doses of mold-penecillin is from penecillium,etc). Here in the United States we have excesses of molds from various sources; our environments, antibiotics directly administered and indirectly administered through those given to animals we consume, and many foods we eat. Be careful what you consume to make sure it brings balance to your body. High levels of toxic mold devastated my health.
