so i didnt put the lid on "tightly". its been 5 days now and im not sure if i should through them out or not. i know i did use garlic and salt with it and it had brown foam at the top of it. the others smell fine but i just placed the lid on top and did not screw it down. i thought there was gonna be some "gas" that needed to excape during the fermentation process. i think i will but them in the fridge now if the dont smell wrotten. has anyone else done this before? is it really nesessary to tighly close the lid to the jar?- Re: i messed up culturing vegies. schlüggell

This is a reply to # 772,267The lid doesn't necessarily need to be tight.
BUT, the vegetables must not be exposed to air or have any air pockets, thus the need to have the lid pressed down onto the material either with a rock weight, or screwed down and checked every couple days.
Also, another key is a consistent temperature and not too warm. If the temperature fluctuates too much will mess things up.
