It doesn't "ruin" it, but like most food heat will denature/damage it to some extent. But in general if you are going to fry use a saturated oil like coconut oil because they are less susceptible to heat damage than unsaturated oils.

You don't - oil on its own - any kind of oil is not pleasant. Eat with food and you'll hardly notice the taste.
