These are my best local options for milk:
1) raw goats milk from goats fed on hay and grain ($6 a gallon)
2) pastuerized (not ultra-pastuerized and not homoginized) whole cows milk from pastured cows ($6.30 a gallon)with the cream on top
Locally I can get butter made from option #2 above.
I trying to do the best we can. I was hoping for some feedback on these options.

MoreThis is a reply to # 661,055I do not have access to raw milk (goat or cow), but my local health food store does carry non-homogonized whole milk. Is it OK to make butter out of this? (I know some recepies in NT say it is OK to use non-homogonized milk if raw is not available, as it will be sitting out to culture anyway.)

This is a reply to # 661,050Why not both? Drink the goats milk raw and culture the cows milk. They both have different health benefits and you are lucky to have a source for both! Goats milk tends to be less allergenic, but is low in B12 and folic acid.
Also, goats milk contains colostrum throughout the entire lactation, unlike cow's milk.
