Hi All,
I just want to share my quick and easy version of the Flax seed/coconut treats we discussed in the coconut thread. Reason I am even higher on this recipe is #2 has whole flax seeds for obvious rancidity issues. I am convinced that it is beneficial to add ground flax seeds as well (whole seeds can not absorb anything...they are pure bulk; they may also add mucelage value? not sure) but I think having both ground and whole is better. So here is my easy version of the treats... I have these frequently.
And I think these are a totally awesome way to increase fiber between cleanses.
1 cup organic light colored flax seeds; ground to fine powder
1 TBS Virgin Coconut Oil (melted)
Stevia to taste (I use 4 packets of Sweetleaf stevia powder)
1 Tsp Almond Extract (I use organic, alcohol free)
1 Tsp Vanilla Extract (I use organic, alcohol free)
couple pinches of Celtic
Sea Salt
I mix all the liquids in the warm pot, then stir in the freshly ground flax seeds (grind well). Spread on a pizza pan covered with parchment paper. put another parchment paper or wax paper on top and roll to about 1/4+
inch (not too thin) and then pop in the freezer. They are ready in 10 minutes.
In the evenings I just break off a piece or two.
You have to eat them frozen for them to retain shape etc. and stay totally fresh.
This is a wonderful fiber plus a real treat in the evenings, which is when I get the munchies. I've been eating this for a couple years and never get tired of it.
