Actually I have a very bad attitude - far to agressive and gung-ho. But I blame it on my illness - I'm not really like that.
For cooking you will not find a better oil than coconut. It is very stable (unlike say olive oil which breaks down). Basically saturated fats are great for cooking because they are saturated. Saturated=stable. Butter is good too.
If you take the heat too high it will begin to smoke and go yellow, which isn't good. But from my experience it can withstand enough heat for most cooking purposes.
Are you overweight? I'm not being rude, but if you are then coconut oil is one of the best things you can eat. It speeds up the metabolism and the
pounds just drop off. There is a forum dedicated to coconut oil on yahoo groups, and a lot of the people there seem to be interested in weight loss. There is a book about it - "Eat fat, get thin" I believe its called. There is another one called "The healing miracles of coconut oil" by Bruce Fife. That is the one I have read - great book!

Coconut oil doesn't pass through the body, its absorbed quite easily. In fact it is absorbed a bit too well - it doesn't make it all the way down the GI tract for things like candida, which is a shame.
If you ever find another food that even comes close to coconut then please let me know!!
