Oh, and in the same vein, a few weeks ago I made up a killer fresh onion dip recipe, which I ate with flax seed crackers that I had dehydrated a lot longer than you're supposed to, so that they were very thin and brittle, and kind of shattered in your mouth the same way that potato chips do - it was really good!
I never measure ingredients exactly but this is a good approximation of what I used - just keep tasting until you like it, and use veggie chips, or super thin crackers, or whatever you like.
2 cups of whatever nuts/seeds you have laying around, soaked overnight (I used sunflower seeds, cashews, and pine nuts)
the juice from half a lemon
1 clove garlic
one slice onion (some friends who tried it subbed green onions/scallions for the white onion but I don't know how much they used)
some celtic salt
Just combine everything in a food processor or blender, and add water a bit at a time if you need to, until you get that nice, creamy, thick consistency. An alternate way is to process all but the onion slice, and juice that instead, adding both the juice, and the pulp, to the dip. Enjoy!
