Hi, there have been studies that show celiac sufferers often do not always heal from eliminating gluten, and there is some indication that more than gluten is causing people not to heal.
I suggest you read this web article:
http://scdlifestyle.com/2012/03/the-gluten-free-lie-why-most-celiacs-are-slowly-dying/
I don't agree with the wording of the title, but please read the article fully and you will see that the majority of people who only go gluten free will not heal their gut dysbiosis. The article includes peer reviewed research and journals so it is worth taking seriously.
The article in summary:
''Yes… gluten is still the kryptonite in Celiac disease, don’t ever eat it. Following a gluten-free diet is a requirement for treating this autoimmune condition… but you can’t stop there.''
This evidence clearly shows that only following a gluten-free diet doesn’t fix leaky gut, gut inflammation, or a damaged gut lining. That means the gluten-free diet isn’t enough to treat Celiac disease patients and anyone using it as the only protocol is at risk for dying much sooner than they should…''

If you click on the webinar link you can register for it for free to get useful information, but essentially all the information in there you can find online very quickly and easily. The primary healing protocol involves:
gut healing supplementation like g-glutamine
huge amounts of a range of probiotics and prebiotics (do your research), best made yourself
avoidance of gluten and processed foods, prescription medications and alcohol
eating whole foods, preferably organic (but at the very least whole), with lots of healthy fats
There is a huge amount of information out there on diet and what to eat/not to eat. You will have to take the time and find out how it applies to you.
