Dr Fuhrman MD equates health with a low calorie but nutrient-dense diet or: Health = Nutrients / Calories (H = N / C).
Of course the number of calories we need is dependent on calorific expenditure, so the average farmhand would need more calories for example, than the average desk-job administrator who receives no exercise.
Mind you, many plant-based foods can be high-calorie such as avocados or even bananas and so on and so on, so the point of view that vegetarians/vegans may be unable to maintain their weight by eating too few calories, is a fallacy, and a view usually supported by many meat-eaters.
We should also bear in mind that plant-foods contain all of the amino-acids we need for building human-protein, and the building of Brain neurotransmitters such as serotonin and dopamine for optimal health, as the body has to breakdown the amino-acids in meat in digestion, before it can become human protein; this is considered by many to be extremely taxing on the digestive energies, requiring more energy than is the case with eating plant-foods, that contain all of the free-form amino acids we need.
However, this is NOT a case against the eating of meat or meat-products, but illustrative of what can constitute a healthy diet. We should also bear in mind that the longest-lived peoples of the World usually ate a predominantly plant-based diet, but did include some meat in that diet as well.
