The thing about going low carb/scd is that you really need to wean yourself off the fillers. In fact all that cheap bulky stuff you thought was essential to your well being actually isn't. Once you have psychologically adjusted to portion size etc, things will get easier. Having said that, i know exactly where you are coming from! So, here are some tricks I use. Cauliflower: you can lightly steam finely chopped cauliflower and then fluff it with a fork to make it somewhat rice like. It's great with curry (I indulge in lashings of butter on it - yum!) or to a lesser extent Asian meals. You can also mash cauliflower as a substitute for mashed potato (not the same, I know!)
If you want to make tacos for the family, just use a nice crisp whole leaf of iceberg lettuce as a kind of 'sang choy bow' cup. The kids can still have their tacos or burritos. As sour cream is not strictly allowed on scd you might use yoghurt or dry curd cheese instead. Cumin works just as well as taco seasoning. Other 'fillers' I use include pumpkin, squashes, also lentils and some beans are allowed so experiment to add bulk to your meals. They are all much more nutritious pound for pound than rice, potatoes and bread and with time you might find that your need for fillers diminishes.
