I think it really depends on your commitment level at the outset. If you hold yourself accountable, especially telling people what you're doing, and 'run from temptation' -- after those first three days, you're more-or-less clear sailing. If you're really worried about it, knock the time down to 4 or 5 days. I think a 7-day-fast is a noble goal you can achieve, albeit with some difficulty.
I'm finishing up day 7 of my first ever water fast, and I'm going to 20 days. I desperately want to stop -- I'm uncomfortable and each day stretches for what seems like weeks, but I've made a commitment and I'm sticking to it. 7 days IS tough, don't think it isn't, but arguable doable for anyone (barring certain health circumstances).
I say go for it! Maybe give yourself an alternate cutoff point, maybe day 4, in case the going gets too rough. I *highly* recommend getting through the first 2-3 days, because after that physical hunger subsides and you (usually) start to feel better.
