How long it will take will depend on factors such as sugar level to begin with and culturing temperature. With store bought kefir I leave it in the fridge for at least a couple of weeks. With home made kefir it is cultured at room temperature and takes a few days. Simple way to tell is to taste a sip. It should be a sour/tart taste, not sweet.
