The best way to store them long term is in glass jars out of the light and in a cool, but not cold place.
The problem with storing them in the cold, such as the freezer is that condensation is likely when you take the herbs out which is not good for many herbs.
The herbs i've got small amounts of, are still in their plastic bags in a tupperware box. Some of the larger amounts i have, are in tupperware, in a dark cupboard. Is that okay?
As long as you are intending to use them soon and not store them long term then this is fine. Plastics are more permeable to air and so the herbs will oxidize faster if stored in plastic as opposed to glass.
I am not trying to be difficult here, so forgive me for asking... would it be advantageous to vacuum seal them and NOT freeze them, or would the glass jar be the best way? I have m-a-n-y glass jars, so storage like this would not be a problem. I was just wondering if keeping air away would keep their potency for a longer period of time. I am new to storing herbs, so need experts to guide me!!! Thank you!!!!
Either way is fine. If you keep the glass jars full this also helps to exclude air. And contrary to popular belief the powders will oxidize slower than the cut herbs since they will pack tighter and exclude more air.
The advantage of the vacuum packing is for the cut herbs since this will remove the air and take up less space. Therefore I would use the vacuum packing for the cut herbs and jars for the powders.
