I've been getting into this raw foods thing lately, by no means 100% following that diet, but incorporating some things other than just salads. Green smoothies, raw nori rolls, nut pates, raw coconut fudge (killer)!
I got a great blender & some nut milk bags, and I'm starting to make some of the nut milks, I've done almond, hazelnut, and most recently brazil nuts - which tastes awesome! I'm wondering how much selenium would make it into the "milk," since there is a lot of pulp left which I put out for the squirrels and birds.
If you want to try making it, I soak the nuts for up to 24 hours or so. (I've been doing it in the fridge in case I don't get around to it for a few days, but at room temp you could probably sprout them a bit which may be healthier, though for a milk I'm not real concerned about that.) I use about 3 cups water to 1 cup soaked nuts, blend till they're pretty fine, then strain and add vanilla and sweetener to taste (honey, stevia, agave, whatever), plus a pinch of
Sea Salt . More water = "skim" milk, less water = creamier milk.
My Blendtec does such a bang up job that the nuts are so fine, some of it gets through the mesh and it can be a little bit sandy, but it doesn't bother me. This is delish in a banana/vanilla/cinnamon chai smoothie or just on its own.
It's easy to make, but about twice the price of boxed. No comparison in taste, though. I am hooked on it now.
