Hello - I made my first batch of homemde kefir earlier this week. I think I did something wrong or perhaps it created great detox within me. I put the kefir grains in 1% milk on Sunday night and strained this on Tuesday night. It sat on the counter. The results were very thin unlike the kefir I bought from the store. I had my 10oz glass of this on Wednesday morning. I mixed flaxseed oil with it as I do with the store bought. The mixture continuously separated no matter how much I stirred. This was different from the store bought stuff. The store bought kefir and flaxseed oil mixes well. Well...I drank the homemade stuff and had terrible dizziness, anxiety/panic Wednesday and Thursday. I am feeling a bit better today, but I truly thought I was dying. The homemade kefir did have a twang to it, but like I said it was very thin and didn't have quite the same twang as the store bought. The directions said to let sit 24 hours and I had doubled that so I thought I was good to go. Do you think I did not wait long enough? Should it be thicker like the store bought stuff? Or was this die off? I don't want to set myself back so I am leery of making anymore Kefir. I've read that it is much better for me that the store bought, but my goodness, I can't work and live with feeling the way I did the last two days. Any insight is appreciated!
