Tzatziki is my favorite way to eat raw garlic and this recipe is very instinctual (i.e. you can’t really mess it up). Here’s how I do it….. approximately…
2 cups plain yogurt (2% fat or more, I use Greek/thick style when I can)
2TBS olive oil
1 small cucumber chopped
3-4+ cloves garlic minced (may be too much for some people)
1TBS dried dill
Salt to taste
Mix it all together and let it sit until the dill reconstitutes. (If I’m in a hurry I put the dill in a teacup and reconstitute it with 1 TBS of boiling water.) This is a great recipe because the creaminess of the yogurt cuts the spiciness of the garlic. – Great with whole wheat pitas.
I make this meal sometimes for guests: Tzatziki with 3 Pepper Chicken over Arugula Salad. Serve the chicken cold in the summer.
3 Pepper Chicken:
Chicken tenders rubbed with
2TBS flour
1tsp+ paprika
½ tsp pepper
1/4 tsp+ cayenne pepper
cook in a medium-hot pan with 1TBS olive oil.
