"At the beginning of January 2004 I decided to eliminate ALL commercially produced products from my diet completely and to make everything from scratch. I immediately felt 100 times better and I immediately started gaining weight. I was able to think clearly for the first time in longer than I could remember. The difference was almost unbelievable. The previous year I had failed almost all my courses and now I found myself at the top of my classes.
In the middle of February 2004 I entered a heavy detox. I had what felt like a very bad flu for 5-6 weeks. I was extremely fatiqued as my body worked to release all the toxic preservatives that had built up in my system over the past 23 years.
On March 8, 2004 I discovered a way of eating called raw. At this point I had really been struggling with making my food from scratch as all the recipes seemed to call for ingredients that contained sulfites and I was having a very very difficult time finding recipes that used base ingredients instead of commercially made ones (tomatoe paste or cornstarch for example). Not to mention the preparation time was killing me, I was starting to get really bored with the food I was eating, and none of it really tasted very good anyway.
I looked at rawfood recipes as a convenience and even said in my personal journal that I doubt I would be a raw foodist because I thought that was kind of weird but this would certainly be helpful in cutting down preparation time.
Well one day all of a sudden I realized I had not cooked in 5 days. I saw how easy it was and figured I might as well give it a go.
From January to April 2004 I gained 10 lbs, I hit the 100lbs mark for the first time in about 4 years!"
