The "Sally Fallon Nourishing Traditions Interview"

"Two studies published in major peer-reviewed medical journals within the past decade should be, in my opinion, major breakthroughs in the use of natural medicine in the treatment of chronic disease. The first, published in The Journal of Cancer Therapy in 2011, showed that men with stage 4 prostate cancer who drank deuterium-depleted water had a mean survival time of 11.02 years as compared to historical norms of about 18 to 24 months. The second study, published in the prestigious journal Medical Hypothesis in 2016, indicated that a ketogenic diet improves cellular energy generation because of metabolized fats’ ability to generate deuterium-depleted water in the tissues.

So, what is deuterium-depleted water, and why are these studies so revolutionary for our understanding of the diet–disease connection?

Deuterium is a naturally occurring isotope[3] of hydrogen. Deuterium weighs twice as much as hydrogen because it contains a neutron that is not present in the hydrogen molecule. Because deuterium is electrically identical to hydrogen, it, too, can bind to oxygen to form water, in this, case D2O. While D2O seems a bit like normal water (which is H2O), it has many properties that differ from normal water, such as a higher freeze point.

Even though deuterium is found naturally in all water, it cannot be incorporated in the healthy gel-like structure that water forms in our bodies; therefore, once deuterium reaches a certain concentration in our cells, our ability to generate energy goes down. Also, as the deuterium levels rise, our mitochondria start to function poorly, and our protein/DNA-folding begins to unravel. These defects are increasingly being linked to such diseases as diabetes, cancer, Alzheimer’s and heart disease, to name just a few. The bottom line? Rising deuterium levels in the water in our cells is the hallmark of an aging, deteriorating body.

The exciting finding of these studies is that an active attempt to lessen the deuterium levels in our bodies has profound effects on the above diseases and metabolic aging. The two predominant ways we can lower the deuterium levels are by drinking deuterium-depleted water (more on this in a future blog) and eating a diet in which the predominant foods are grass-fed fats and a wide variety of vegetables, especially green vegetables. It turns out that the chloroplasts in the leaves of plants excrete deuterium from their tissues, leaving them naturally deuterium-depleted. When any animal eats a diet based on green leaves, meaning, grass-fed animals, or humans eating greens, they become naturally deuterium-depleted and hydrogen-water replete. This condition is the opposite of metabolic aging and is perhaps the molecular basis for the dietary approach I outline in How (& Why) to Eat more Vegetables.

Obviously, with dehydration, vegetables lose water; the deuterium-depleted nature of the plant tissue itself, however, doesn’t change with dehydration.

The story of deuterium-depleted water is just one more reason why the Nourishing Traditions diet of liberal amounts of grass-fed animal fats and fatty organ meats, mixed with a wide variety of organic, biodynamic or wild greens, should be the foundation of everyone’s healthy approach to eating."

Some of the questions included:

“Does a nutrient dense diet for optimal human health need to involve animals”?

“The traditional yoga diet is lacto-vegetarian. Do you think meat is necessary for everyone”?

“Can the world population sustain a diet that relies on animal products”?

The following is based on notes that I wrote while listening during the interview and that I had taken editorial liberty in editing into whole sentences right after.

Sally - For Dr. Price (DDS) - teeth were the window to overall health. He found 14 groups with exceptional health with cholesterol-rich, saturated fat-rich animal foods that he wrote up in Nutrition and Physical Degeneration.

In the early 1990’s I got the idea to write the book: Nourishing Traditions. In 1999 - 'in the teeth' of the message to avoid animal fats - we founded the Weston A. Price Foundation to make Dr. Price a household name.

The key is the fat-soluble vitamins. Vitamin K-2 from animal foods like butter and fermented foods. That is the real vitamin to prevent tooth decay. Not fluoride!

They don’t eat beef in India but tend to eat lamb (the whole animal) and shrimp.

Every single human being needs animal foods. Dr. Price didn’t find any healthy individual without a diet that included animal foods.

The food industry pioneered addiction technology. People usually go cold turkey. However, it’s a lot easier with the nourishing traditions diet as it is satisfying without creating cravings. People may be on a politically correct low-fat diet but by 9 PM they go to the freezer and eat a half-gallon of ice cream. Our body needs the fats!

Re: whole, raw, plant food diets.

Sally: Plant foods are not nutrient-dense unless you ferment them into “super raw food”. However, human beings have always cooked their food. Certain foods require cooking to neutralize the toxins.

We need to look at the traditions of any food we have. One example is that soy was fermented at least six months to a year. However, in India - people relied on dairy for thousands of years and yet the soy manufacturers began convincing the Indian people not to drink milk but to drink soy.

Prisoners have rights to a sustainable diet. We want an injunction against serving soy in the prisons. If we get a favorable judgment the other prisons will take notice.

A caller came on the pod cast concerned about toxins in animal foods.

Sally replied - The entire food supply is polluted and needs cleaning up across the board but you’ll be shooting yourself in the foot by eliminating animal foods because of the nutrition. For instance liver provides vitamin A which is key for detoxifying and vitamin B-12 from animal foods are both important for detoxifying.

Another caller asked about the difference in nutrition between egg yolks and egg whites.

Sally - Egg yolks have all the good fats and fat-soluble vitamins. The whites have pure protein. I add an additional yolk to every egg.

February 15 -

In another interview Sally was asked:
Q: What are the main things wrong with the typical western diet?'

Sally responded:

"Absolutely number one is the wrong kinds of fats. The liquid oils and the hardened, partially hydrogenated oils are an absolute disaster to the human biochemistry. Not only that, but they have replaced the very fats that we absolutely need to be healthy. That’s number one; I put that ahead of sugar and MSG and all the other horrible ingredients in the food supply. I think if you’re eating plenty of the right fats (which includes cod liver oil) and avoiding the wrong fats, you don’t have to be quite so careful about the other things. That being said, it’s good to reduce your refined carbohydrates to a very minimum – that’s sugar, white flour, high-fructose corn syrup, etc. It’s also important to avoid all the additives, especially the neurotoxic ones like MSG, which are basically in all processed foods.":

Dr. Price was disappointed that he did not find vegetarian societies in his world travels. Despite what ever number of individuals may adopt it - vegetarianism as a truly healthy way of life for an entire society simply does not exist!:

The Essentiality of Animal Foods

"When Weston Price traveled to the South Sea Islands of the Pacific, he hoped to find 'plants or fruits which together, without the use of animal products, were capable of providing all of the requirements of the body for growth and for maintenance of good health and a high state of physical efficiency.' He was disappointed. On the island of Viti Levu, he instead found inland-dwelling groups relying largely on plant products who found it so essential to consume shellfish at least once every few months that they would trade plant foods from the mountains for shellfish with coast-dwelling groups even when these groups were at war with each other. Shellfish are especially dense in animal-based nutrients. One serving of clams per month provides the same amount of vitamin B12 as two servings of salmon per week. One serving of oysters per week likewise provides the same amount of zinc as a quarter pound of beef per day. People who wish to minimize their intake of animal products would do best to consume small amounts of shellfish to obtain these nutrients. For those who do not wish to eat shellfish, the requirement for animal products might be much higher.

Price’s research led him to the following conclusion about vegetarianism: 'As yet, I have not found a single group of primitive racial stock which was building and maintaining excellent bodies by living entirely on plant foods. I have found in many parts of the world most devout representatives of modern ethical systems advocating restriction of foods to the vegetable products. In every instance where the groups involved had been long under this teaching, I found evidence of degeneration in the form of abnormal dental arches to an extent very much higher than in the primitive groups who were not under this influence.'

Thus, we can conclude from Dr Price’s studies and a large body of subsequent research that animal foods should be used throughout childhood development, especially those animal foods that are richest in vitamins and minerals, such as liver, shellfish, egg yolks, bone broths, and high-quality dairy products. Depending on their individual constitutions, adults may have varying needs for animal products and those who object to the use of meat should either consume shellfish on a weekly or monthly basis, or high-quality dairy and egg products on a daily basis. Additionally, red palm oil and bananas would respectively be useful sources of carotenoids and vitamin B6.

Many people may last a long time on a diet that does not contain optimal levels of animal products, while others like myself may develop health problems very quickly. Given all the nutrients that are so much more easily obtained from animal products, it should not be surprising that some people adopting a vegetarian or vegan diet may develop deficiencies very quickly. Each person has to pay careful attention to his or her own body and give it the nutrients it needs—and for many people this will mean giving up on the myths of vegetarianism and consuming the animal products we require by nature.":

I enjoy organic foods and generally prefer them over any conventionally-grown foods that may be subject to pesticides, herbicides, fungicides and the like. However I strongly prefer grass-fed animal products over most any organic animal products. The designation of "organic" for animal products does not mean that the animals are fed their proper diet. Cows are ruminants and not grain eaters! It does not help the cow to feed it organic grain not does it make for a better animal product.

I enjoy organic foods and yet my diet is not really "plant based". Truth be told it is more "butter based" than anything else. I enjoy organic vegetables with plenty of grass-fed butter! My favorite prepared vegetables are mostly sauteed in butter. I can easily consume half a pound of the grass-fed variety every day. "Butter based" is not an exaggeration!
