CELIA CONCEPCION is sending
down a gallon of the new coconut syrup
for testing.
The Fermentation workshop,
part of our EDIBLE CITY CELEBRATION,
was very sucessful. More than fifty attended.
MARLEY, MARC BAILEY, and KIM each did a part.
Kim taught how to make ginger ale.
I was glad she had organic sugar from
TRADER JOE's. I talked to Marley about
the Coconut sugar from AZUKAR ORGANICS.
I met Celia at last year's Natural Product Expo West
Fresh ideas day.
Supporting organic projects is especially important
with the proliferation of GMO's between 70-80%
of our food supply.
We tried to make Kambucha with the coconut sugar.
It did not work. Celia believes the coconut sugar
will do a better job.
I showed the package to Marley. He is very selective
with the products he uses. He wants them to be
extremely local. The Coconut sugar is made in
the Philiplines. I am not yet sure where I sugar comes
from.
I read something recently about events in Boulder
Colorado where they are starting to make sugar from
GMO sugar beets.

We have a fermentation workshop tonight.
They use white sugar.
Most white sugar today is chemically laced
or likely soon GMO. GMO's are moving in
sugar beets.
I really liked this product that I got from
CELIA at last years NATURAL PRODUCT EXPO WEST.
I called her and she is sending
some of the coconut sugar is syrup form.
Others are having success with this
for Kombucha.
