Chef JM
and some other's I know
have taken up the banner about raw milk.
I have not followed the controversy too closely.
JM records his comments here:

Dr. Bernard Jensen was in favor of raw milk as
the ONLY milk worthy of human consumption.
He preferred raw fresh goats milk over cows milk.
He helped popularize the use of raw goat's milk.
At the old Hidden Valley Health Ranch,
he had alpine goats. This was his favorite.
He would have Polinar, his main milker, collect the milk
at most of the months of the year, when the kids were not drinking.
May I have a glass of goat's milk is in fact one of the few lines
I know in Spanish!
Jensen felt that warm goat's milk, fresh from the animal,
contained a vital force that could raise the dead.
He would gather the milk, and often would make it into goat's cheese
that was delicious.
Jensen considered pasteurized cow milk pretty much
Unfit for Human Conssumption, so if the Secretary of Ag
wants to really go the distance by taking away milk,
he can start with disposing of pasteurized milk.
Pasteurized milk is created presumably to make sure
it is free of bacteria, etc.
Raw milk will ferment and turn to cheese.
Pasteurized milk rots into a stinky mess.
I do not know how they make cheese from
pasteurized milk, someone who knows more will have to check
this out and comment.
Raw milk is a health food. Dr. Jensen believed in
cultured milk products more than straight from the cow.
He liked the yogurts, hand made, and the Kefirs.
The long lived people of Europe used raw milk that
had been turned into fermented milks. This was a key to their
good health, Jensen taught.
He believed that most people in the US of A were allergy to
pasteurized milk. He often said that there were four foods
that made up most of the American diet. These included
milk and wheat. I do not recall off hand the other two.
Sugar may have been one of them.
IT was the overuse of pasteurized milk that caused allergic
reactions.
The most famous experiments on raw milk were done
by Dr. Frances Pottenger.
Look up the cat experiements.
Generations of cats fed on raw milk and raw meat were healthy.
Those fed on pasteurized and cooked meat became unhealthy
after so many generations. I recall they lost their ability to
sire the next generation. They were very weak.
I would applaud the CA Sec of Agriculture for wanting to do something
for the people of our state. I would suggest he set up good standards
that create healthy cow and goat herds for our children, and outlaw
the regulate the use of pasteurize milk. A campaign to educate
the consumer about the deliterious effects of pasteurized milk is in order
and needs research for this generation.
I applaud Chef Jem and others for setting out to educated us
about the benefits of Raw Milk. I am sure the Sec of Ag of CA
will find Chef Jem's new DVD most interesting.
