Geez, I HOPE you are not eating raw pork~! Actually, unless
you are buying organic meat, I would not be eating much if
any meat raw. Years ago, I loved my meat rare and had a butcher
who fixed me great cuts, even steak tartare was a favorite...

Now, I do not eat much meat and when I do, I prefer it to be
well cooked since the reality is that the meat today is not
like the meat I grew up on. It is heavily chemicalized with
hormones and Antibiotics etc. There are parasite loads to
consider too. I used to eat raw fish too but after too many
liver flukes in my liver flushes, I gave that up and when I
look at a piece of sushi, I feel like it is playing russian
roulette with my health since if you eat a piece of contaminated
fish, you can easily ingest thousands of eggs of the fluke
parasites. Meat contains lots of biological hazards and raw
meat is certainly a risk. I am exceptionally careful to wash
my hands and counters etc. after preparing meat also.

Recent exposes on television also showed where meat packing
appears "puffed" up because it is shot with gases to keep
the appearance of the meat fresher. As a child I did not
appreciate that the weekly chicken was hung to bleed on the
clothesline and that we were lucky that the family came
together to butcher the hogs to fill the freezer. We bought
a cow and had it butchered for meat and all of our meat was
from white waxed paper bundles in the freezer. I think
personally that our food sources have been degraded and that
relaxed control measures have ensured that when you eat
meat that has been churned with a gazillion other animals
or people look the other way hoping that no one will notice
that the culls and sick animals are processed into food.

Do think twice or more about what you are putting into your
body. Even if you have to eat less meat, try to find a way
to buy organic if you are eating this stuff raw or go to a
place where you can buy meat which you have an idea where it
came from.

My days of really *enjoying* meat are over. Nowadays it seems
we wake up, check what is being recalled, and eye our refrigerator
and pantry as if it could be a biohazard zone...ggg...
