Yup, it sounds like fats may be a problem. First thing: cut down on the nuts, you only need about a handful a day. Too many nuts cause constipation and stomach upset. Your fat intake should mostly be raw oils, like cold-pressed flaxseed oil and extra virgin olive oil, and coconut oil (use coconut oil for cooking or add it to smoothies, or just take a spoonful and eat it lol). I don't know how many calories you eat, but somewhere around 40-50 grams of fat a day is probably near what you need (20-30% of your total calorie intake). A few avocados a weeks are good too - 1 to 3 a week is fine. Coconut milk is great, expecially if it's fresh. For the juices, try juicing your own if you have or can get a juicer! juicing everyday is GREAT for cleansing. Processed juices bought in the store have lots of preservatives in them to give them a long shelf life. They're really not nutrient dense unless they're completely fresh from a juicer.
I'm not a fan of meat (I'm vegan) so I don't believe in eating fish. But it's a choice - if you do decide to eat fish then do so only a few times a week - 1 to 3 times is enough. And make sure it's fresh and mercury free. For protein, try making shakes with raw hemp protein powder (from healthfood store - mix with fruit, water and coconut/nut/rice milk if you like). You can also use chickpeas and lentils for protein. (Are you taking good B-12 and iron supplements?)
Take care not to parasite cleanse too often - you'll create bugs that are resistent to the cleansing herbs and thus they'll take longer to die. Every 90 days is fine for a parasite cleanse until you're clean, then you can extend it to every 6 months.
Also, the weight gain could be partially water weight. You said you're drinking a lot of water, and when the body isn't used to getting that much water it stores it in the body. Your body will let it go when it realises the water is going to keep entering the body, so there's no need to store it. Don't worry, it's only temporary! :)
