Not from The Maker's Diet, but from Nourishing Traditions, so I thought it might be helpful: 'Don't neglect to eat the skin and the dark meat as well as the white. The skin provides valuable fat-soluble vitamins and antimicrobial fatty acids, while the dark meat contains more minerals than the white.' Page 279
I could not see any mention of the skin in The Maker's Diet, but many of the chicken recipes come from Nourishing Traditions.
