I would like to expand on Kathryn's message. I agree that the most abundant source of Omega 3 mayonnaise is Spectrum Naturals. Here's their website: towards the bottom is the omega 3 stuff which includes a spread. http://www.spectrumorganics.com/index.php?id=57 I also noticed that they had an Olive-Oil brand which sounds interesting.
As for the carb withdrawls I noticed that after first week I was fine (I believe the same goes for my wife). After a while you'll find things that will supplement your cravings for carbs such as eating berries. I also noticed that certain circumstances I had to be aware of a strong craving. For instance, I like to sit down and watch NASCAR on Sunday. My old habit was to grab a bag of B-B-Que Chips and a Mountain Dew. The first craving attack hit when I sat down to watch NASCAR in the first week. Now I'm in the habit of grabbing a health treat before sitting down (such as berries) and a tall glass of ice water.
4 - weeks is an easy goal without carbs and as phase II comes along you'll see more and more things which you are allowed (such as milk) which help. In phase III you're allowed carbs but keep in mind that this takes a bit of will power to avoid over consuming carbs once you're free to have them.
