Congrats on starting the diet. I have been reading the book for several days now and have also been concerned about the variety of foods. I think my biggest concern is PRICE. Organic produce and meat is very pricey around here and the variety is limited. It is next to impossible to find goat's milk or cheese. I found some raw honey at a natural foods store and it was $18!!! EIGHTEEN DOLLARS! Overall I agree with the all the concepts of the book and I am going to start slowly by just eliminating as much 'unnatural' foods as possible and then slide into phase one. As far as recipes go, I can't help you at this point but perhaps we could start a message board where people could exchange recipes.
